Another herb we grew a ton of this winter was basil. Basil grows extremely well hydroponically. With all the basil that we had we were constantly making tomato and basil sandwiches but better yet is Pesto! Bec likes making Pesto because it stores well and can easily be added to pasta or chicken to make a quick but impressive dish.
- 3 cups of fresh basil
- 1 garlic clove
- 1/4 cup of pine nuts
- 1/4 cup of grated parmesan cheese
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- salt and pepper
Directions:
- in a food processor mix the garlic clove till finely chopped
- add pine nuts till chopped
- add basil
- add grated parmesan cheese
- add olive oil and lemon juice
- little salt and pepper
- pulse till paste forms
Put on top of chicken or pasta
