This is Rebecca's Fresh Salsa Recipe. It is the best salsa ever! This salsa looks great, tastes fresh and is very easy to make. Bec and I actually planned on opening a burrito restaurant about a year or so ago based around this salsa along with her guacamole and bean recipes. Maybe if you keep following this section you may see those here as well. Most of the ingredients in Bec's recipies include vegetables that you can grow yourself either all year long indoors or in small outdoor vegetable garden in your backyard.
- 2 cups of dried fresh tomatoes
- 3/4 cup of sweet white onion
- 1 jalapeno (adjust to liking)
- 3 tablespoons of chopped fresh cilantro
- 1 lime - juiced
- 2 tablespoons of olive oil
- sea salt & fresh ground black pepper
